Experimenting with clean eating is one of my favourite things to do. I absolutely love the challenge of taking a traditional super fattening, buttery, sugared out breakfast and creating guilt free pancakes instead.
Now, don’t immediately write off these pancakes because they’re “clean eats.” Don’t click out of this blog because you think they’ll inevitably be gross. I kid you not, my boyfriend (a pancake connoisseur) LOVES these pancakes.
They’re a great guiltless, low calorie, no-refined-sugar brunch option even for those with a serious pancake sweet tooth. (P.S.: They’re also dairy-free and gluten-free, which is why you won’t leave this breakfast feeling heavy as a semi-truck. Whoop whoop!)
Easiest Guilt Free Pancakes of Your Life
¾ Cup oats
¾ Cup egg whites
½ Teaspoon baking soda
1/8 Cup almond milk
½ Teaspoon vanilla extract
A dash of cinnamon
If you like your pancakes thick and oat-y, simply combine everything in a bowl and mix. If you prefer your pancakes smoother, combine everything into a blender and mix for about 10 seconds.
Makes about eight 3-inch pancakes. Serve with coconut butter (55 cals) and if you want some syrup-y goodness, coconut nectar (55 cal) and you’ve got yourself a complete pancake breakfast all under roughly 200 calories per serving! (A serving is 2 pancakes.)
