Many diet and nutrition experts will tell you that breakfast is the most important meal of the day. I used to disagree with this, skipping breakfast only to run out of steam during my workout and be starving after I was done. I finally decided to jump on the ‘breakfast bandwagon’ starting out with smaller breakfast items like ¼ cup of oatmeal or a piece of Ezekiel toast before hitting the gym.

As of late, I’ve been enjoying breakfast even more by creating healthy breakfast bowls, especially during the weekends as an alternative to high-calorie breakfasts and brunches out. Just last week I decided to make a breakfast bowl, using all organic ingredients, brown rice and lots of yummy veggies.

Here’s a simple recipe to follow – feel free to add more veggies or switch things up a little according to your taste preferences.

The first thing to prep for your breakfast bowl is to make some organic brown rice. Put this on first as it usually takes at least 20 minutes to cook. I cook enough for 4-5 servings and then refrigerate it so that I can use it for another bowl or meal later. Next, get some organic chicken sausage and cook this on the stove.

The third step is to make a simple egg omelet (or egg white, your choice). Add veggies of your choosing – I usually use mushrooms, zucchini and spinach. Or, if you’d prefer, cook your veggies and an egg sunny side up and serve it this way.

Add about a ½ cup of cooked rice to your bowl, add the chicken sausage and then your cooked egg (veggie omelet or sunny side up with veggies on top).

For vegetarians, simply replace the meat with black or pinto beans. Top with Sriracha or another hot sauce, and enjoy!

1/2 Cup organic brown rice (fully cooked)
1 Pc organic chicken or turkey sausage
2 Organic eggs
Black/pinto beans (optional)
