Okay, I lied. These are not just gluten free chocolate chip cookies. They’re so much MORE than just chocolate chip cookies. They’re loaded with other delicious little goodies which make this recipe rich and yummy, and totally worthy of eating the dough.
I guess the real title should have been…
Gluten Free Chocolate Chip Cookies Loaded With Tons of Stuff
In truth, these cookies are actually a fully organic, refined sugar-free, gluten-free and vegan-friendly coconut, walnut and oatmeal chocolate chip cookie.
They might take you all of 10 minutes to prepare, and you definitely don’t want to over bake these babies. Serve with a cold glass of almond or coconut milk for the perfect pair.
1. Start by pre-heating your oven to 350F.
2. Mix together your coconut sugar, coconut oil and vanilla. (It may be super runny at this stage.)
3. Add in your flour, baking soda/baking powder, almond milk and other mix-ins.
4. Roll into medium-sized balls on a cookie sheet (they won’t expand much.) Flatten with a fork or your thumb. Bake for 7-8 minutes.
A Note on Using Gluten-Free Flour:
You may substitute this recipe with whatever kind of flour you like – if you prefer a different kind over oat flour, no worries. I chose a blend of almond and oat because both are gluten-free and lend their delicious nutty, oatmeal-y taste. Using a different gluten-free flour like almond, garbanzo bean or brown rice flour will also work, but your cookies might vary a little.
Full disclosure: Using flours which are free of gluten will not always result in a “light as a feather” end product. The more you experiment with gluten-free cooking at home, the better you get to be at it.
